Saturday Pancakes

Every Saturday, Abel and I sleep in as late as we can and then we eat our special "Saturday Morning Pancakes".  For one of our wedding showers my Mother-in-law gave me a cookbook of her recipes, "The Crosby Cookbook". We have modified her oatmeal pancake recipe to make our weekly "Saturday Morning Pancakes". 

Side note: I think EVERY mother-in-law should make one of these for her daughter-in-law. It was one of my favorite shower gifts, and I use it ALL of the time.


Saturday Morning Pancakes
1 1/2 cups oats
2 C. buttermilk *
1 tsp. baking soda
1/2 - 1 cups whole wheat flour
1tsp. agave nectar/honey/maple syrup/sugar(it's only 1t. so whatever you have on hand or prefer works here)
1/2 tsp. salt
2 eggs 
1 cup strawberries
1 mushy banana

*If you do not have buttermilk on hand (I never do) then use this substitute: 1/2 cup milk : 1 tsp. vinegar.  Let it sit for 5 minutes.  So for this recipe: 2 cups milk : 4 tsp. vinegar



Last summer, a pint of blueberries we on sale for $1.00 at our HEB, sooo.... I bought roughly 12 pints to freeze, so we could have them in our smoothies, blueberry muffins and to make blueberry syrup. We LOVE this syrup! (I used the last cup of our blueberries this past weekend! THANKFULLY summer is right around the corner; I am hoping for another sale!)  Abel thought I was crazy for buying so many pints, but he sure was thanking me all winter when he still had blueberry syrup for his pancakes!

1 cup blueberries
1/2 cup maple syrup (PLEASE use the real stuff, not the HFCS nasty stuff)

Place blueberries in sauce pan  on medium to medium-high heat, until they start to burst.  Then pour syrup over blueberries and heat through. Do NOT boil.  Pour over pancakes and ENJOY!


These pancakes are very filling. Since we get up after breakfast we just do a brunch and forget about lunch. And this my friends is one of the reasons, Saturday is my favorite day of the week.
